Rewiring old trucks

Hello team,
I’m in a situation where I need to rewire two trucks, one being GMC that is, I know this is a ford truck zone but I think you guys are more knowledgeable than GMC folks out there. My plan has always been to get through GMC before I get to the ford. It’s a 1946 1.5 ton GMC.
Now, the question is, there are many universal wiring kits available for $300 or so. How difficult are these to understand and wire? Are there any site/documents that explain how to wire? Just looking through the mountain of wire gives me second thoughts.
How much would a professional shop charge to rewire the entire truck?

I don't think you've gotten any bites on this thread in the last few days because your questions are rather vague. "How difficult" is going to change from person to person. If you're skilled in electrical work, wiring is quite easy. If you're not skilled in electrical work, wiring is quite difficult. Also note that "quite easy" and "quite difficult" in themselves are subjective terms that vary from person to person. The correct answer to your question is that no one can tell you how easy it will be for you.

"How to wire" is also a rather open-ended question. Are you talking about how automotive electrical systems work in general? Best practice for making connections? Selecting wire gauge? How things are specifically connected on a 1946 GMC pickup? Where to source parts?

The cost of having a professional shop rewire the vehicle would depend on the shop doing the work, as well as what all "entire truck" specifically includes.

Thanks, What I was trying to get to is, do these aftermarket wiring kits follow a std on par with OEM(any particular)? The reason I ask is, let's take a simple trailer wiring example:
Trailer Wiring Diagrams | etrailer.com

This tells me everything I need to know and I have used this extensively. Is there something similar that I can follow? A local shop is asking $2000 plus for parts and labor.
