For my headliner, I had the original to start with but it was in really crummy shape. I got some 1/8th inch thick peg board from Home Depot - the kind without the holes though. I traced my old headliner, cut out the new, and then covered it in fabric using spray adhesive and wrapping it around the back and securing it with glue.
For my dash pad, mine was cracked in four or five places along the top. All I did was covered it in fabric similarly to how I explained covering the headliner above. These are just a few ideas.
If you don't have either, I suggest one of the parts suppliers like Dennis Carpenter, LMC Truck, Bronco Graveyard or National Parts Depot, searching on eBay, your local craigslist, or checking at a junkyard, although finding either in good condition is sometimes tough.
