Looking at getting a big toy hauler, 14500 lbs dry weight and 18000 lbs gvw and a 3000lbs hitch weight. Looking at a couple of 07 f350's, one srw and drw. Which one is going to be the best choice? I like the looks of the srw better but not sure if it will handle it.

it won't --- (at least not legally nor safely )
and for that old a truck, the dually might not - I'd look closely at the specs for both trucks before I dove in....
3k of pin and 18,000 total is definatly dually territory. You'll be over rear axle and GVW in no time with that heavy of a trailer on a SRW truck. Ford only rates the current SRW truck to around 16K, IIRC.
