First, is there any sweet spots above 2k where I can cruise in my truck? Sometimes 70 just isnt fast enough on long, empty interstate drives down to Omaha to see my girlfriend. I want to go faster, but dont want my milage to absolutely tank because of it.
Second, on one of my dads trucks the doors lock at like 15mph or whatever it is, but then dont unlock when you open the driver door when you stop. Its annoying as crap when you get out before pressing the unlock button, then when you need to get into the passenger side, or any of the other doors, you have to run back around to the driver door and press the unlock button. There is only one of our 5 trucks that does this. Is there anyway to overide/disable that locking mechanism?

You are pushing 8000 pounds of steel, rubber, and glass... with the aerodynamics of a brick. 2000 RPM or lower is the sweet spot. You can go as fast as you want over that, but tanking will ensue. Sorry.

Yeah, I realize that, but I was just curious if it was a steady gradient in decreasing mileage getting consistently worse as speed increases? Or is it possible that lets say 85 is more efficient than 82 for some reason?
Yes, 87 is a pretty good sweet spot. Got 19.6 mpg at 87 on my way to Tennessee last month.
Ok maybe not, with 3.73s I've noticed that 50 will get the best mileage (lowest RPMs in OD) and anything above that is a curve downwards. 65 is a very economical speed, 75 is gonna hurt your wallet. 70 is a happy medium IMO.
Now towing, I haven't seen much difference between 65 and 75 believe it or not. I think it's because I downshift a lot at 65 going up hill, but can maintain 70-75 up hill without shifting down because of the higher torque range.
As far as the lock/unlock issue, the procedure should be in the owners manual. Seat belt alarm can be enabled/disabled as well.
Good to see another So Dak guy on here! Mine is much better under 60: but I agree that 65 or 75 dosen't make much difference. My engineering friends always talk about a big wall of air that starts to affect things when you get over that 60 mph speed. The locks you can defiantly re-program, it was the first thing I changed on my truck. If you ever run into trouble running down I-29 in our area, I'm only about 6mi off and willing to help all other FTE guys.
