EFI to Carb
You can put the same type of exhaust on an EFI as a carb, and it'll sound the same. You're asking for more hassle than you think, and it's gonna cost more and take more time to maintain & upgrade. EFI is MUCH easier, cheaper, & more reliable.

EFI to Carb
As far as daily drivability EFI is much better.The only advantage to swapping to carb is performance mods are a lot cheaper and easier.Don't be so quick to trade one set of problems for another.Go to the corral.net and type "efi to carb" in the search.
