EOT and ECT.

Just took my 05 6.0 250 on a trip towing horse and trailer . Have new scan gauge. On straight ground at 60 mph eot was 190 to 198 and ect 180 to 188. When pulling hills eot got up to 214 while ect was198. Once on flat ground temps whent back down to less than 15 degree difference between two. What should temps be?

temp deltas are on flat ground 65 mph and unloaded
