I recieved a Scanguage for Christmas and got her hooked up right away. The problem is my ect never exceeds 173 and my eot ranges from 180 to 185. What does this mean. I had the oil cooler replaced last year after she went bad and I had catastrophic meltdown.

More than likely you have a t-stat going out and it needs replacing.
That's about exactly the result I had when my thermostat went. The fact that your oil temps have been dragged down as well speaks to how well your oil cooler is working. No biggie, the part is about $35 at the dealer, it comes with the o-ring installed, you drain the coolant in the rad out and save it, take the hose off, two 10mmhead bolts and the thermostat comes off (it is the part on the block that the hose attaches to, the whole neck assembly), new one in, coolant back in and away you go. If you can pull a vacuum on the degas bottle, that is supposed to help burp the air out when you refill. I had to also take my air cleaner out because the hose clamp worm gear was right over one of the 10mm head bolts, but you may not have to.
