460 running hot

Alright i have a 1997 f250 460 with 66k original miles and the RHP upgrades. All of a sudden the old girl is running hot, but in a strange way. When I was doing a trip from Fort Drum to Troy NY (about 200 miles) the temp gauge was at about 75% (50% being in the exact middle of the gauge, 75% being at the L in normal) the whole way. Then Id get to a light (where it would stay at 75%) but as soon as I took off through an intersection, it would drop down to what im used to it running at which is between the m and the a in normal (aroudn 55-60%) Once I started crusing again it would go back to hanging out at about 75%. I checked the fluid level, and its good... any ideas before I just start replacing everything?

When the truck is rollin there is air goin into the motor and cooling it down, as supposed to when its stopped theres little to none air goin into the motor to cool it so temp will rise

You might want to add some antifreeze just to be sure and monitor it
