Oil viscosity damage to engine??
A lack of oil is what ruins engines. When too much gunk and built up in the oil galleys and won't allow oil to flow to needed areas will cause premature ware and failure.
In my mind ford asks for 5-20 oil for three reasons. 1. Temperature- when it's freezing cold oil will thinken and cause hard starts. Bad things. 2. Fuel efficiency- lighter oil means less less restriction in turning parts and better MPG engineers will see their grandmothers for half a MPG. 3. lighter oil flows better and even with blockages in oil pathways. Even bad oil is better than no oil.
Here's a real question for you. What makes you think 10-30 will protect better than 5-20?
