Darkside Question on cooling

I am out of places to ask this question. I know this is the first place to ask most questions but I have a C%^$y problem. I know they are all problems.
I have a 350 in my 55. It was already there before I got it. Not knowing if I would like or keep the truck during the build, I lust kept it in there.
Now the problem. After 4 or 5 miles into a trip the temp gauge pegs out at 250 deg. The truck is not hot at all but the gauge does this every time. After a few miles it will come back to normal and stay there the rest of the day. I want to be able to trust my gauges but this one won't let me.
I have a 4 core Aluminum radiator with an electric fan that runs all the time. My temp. sending unit is in the head. Maybe the intake would be better? I thought it was air in the system, but after 2000 miles I think we can rule that out.
Any thoughts guys and gals??????

I am assuming the gauge is electric, that being said double check all electrical connections, especially the grounds. You can also loosen and re-tighten the sending unit insuring that it has a good ground as well. First things I would check.

I agree, it sounds like an electrical issue. Either the gauge is going "open" or "shorting out" at a certain temp during the warm up. On an electrical gauge it will either peg all the way hot or all the way cold when there is an open circuit....it will peg the opposite direction when the wire is shorted out.
My gut instinct on this one is to try another sender and see what happens.

As for the chevy engine, I wouldn't worry about it. Its in there, the truck is running and you're having fun driving it, so keep on keeping on

Thanks, I haven't thought of checking connections. Will do that tomorrow.

I agree with what has been said so far. Here's another possibility. If someone put the thermostat in upside down, the engine has to get real hot before it will open. In the upside down position, the wax reservior is not in the engine water so it takes longer for the wax to start to melt. Just a thought. Thes stat itself could also be bad. Good luck.

I have changed the stat twice hoping that was it. When the gauge goes over to 250 I have gotten out to check temp with a temp gun and it isn't hot. As soon as I get back in the temp is back to normal most of the time.
