So my truck I seeked out, put loving care into and have enjoyed for a short while;.....a very large tree branch fell on the roof and hit mirror on one side and dented the body on the other side. They said they may total it!!!

Who cares if it's totalled. Buy it back and pay cash to a body shop friend to fix it. If it is a midwestern truck it is probably a good thing. Most of the 7.3s are starting to rust on the cab corners and rear wheel wells.
A friend of mine had a 2000 7.3 4wd crew cab long bed dually... Some guy pulled out infront of him and he hit them, a curb, and a phone pole. His truck had a bent frame, front was smashed, axle dammage, and the roof caved in from the pole. 230,000 miles. His was totaled too, but he got 15,000 from his insurance. He had to argue for about 3 months and find similar trucks at that price to get it, but in the end won... They wanted to give him I think, 3,500...
Too late for the OP, but I'm pretty sure most insurance companies will let you put a rider on to cover additional value. I know when I go put a BTS tranny in my truck, I'm looking into that. Already dropped about $5k on it this summer for brakes, tires, rear axle rebuild, etc. I'd hate all that work to go down the drain.

I know my insurance company writes my policys up with what has been done to my truck that doesnt include maitenance. Havent really started it up on this truck yet, but my 01 Dodge Dakota R/T that got totalled by an idiot female on the phone, running late, deciding to run a red light and T-boneding me brought me in a pretty penny. I dont know how exactly they write it up or what its called, but when I built the motor I took in documentation and reciepts and that was added. Same with the supercharger and all accessories with it. Basically they took it down to everything that was not stock or dealing with maitenance. And when I talk maitenance they were breaking it down like:
Motor build and supercharger-covered
Labor to build-Not covered
You get the point. But if I get to building this truck for more than what I plan I will start one of these policies up. I think my premium was like 15 dollars a month different on the Dakota, so its not a huge bump in it. Just something to think about and ask about next time around.
