My 40/20/40 with the flip up seat has removable headrests on each side. Looks kind of goofy without them because the sculpted padding creates an obvious saddle where there should be something and the super cab seatbelt hump is still there, but they do come out. I don't really like the built-in headrests on the Lariats (and maybe the XLs?), being able to remove it helps with wearing hats.
I have the fixed headrests on the XL bench. I wish I could find a bench without headrests. After all, what is a pickup without a bench seat?
I think I would also settle for a 40/20/40 and just yank the head rests out if I can find the proper color. Hopefully it won't interfere with the shifter.
Get some seats from a 2011+ truck. They'll bolt right in and you can take the headrests out or turn them around. Turned around works for me with a cowboy hat.
