Head studs are not cheap for the 7.3, that's just how it is. The bolts in the 7.3 are larger than the ones used in the 6.9, so the 6.9 was more prone to head gasket failure and the studs were more necessary.
And no, they do not need to be professionally installed, but it depends on your own abilities. They're much easier to do with the engine out of the truck, but I did mine with it still in. Only takes patience and some basic tools (including a good torque wrench.)
They are a good safety thing but if your not going to boost above 15psi you should be good...Many have boosted above with out problems....But I wouldnt do it unless you put new head gaskets in.
