what year? if its EFI then its 145 hp auto and 150 hp manual. 265 torque for the auto and 260 torque for the manual. as for carb'd...its about 120 hp and 250 torque. dont really know what ya mean by pulled out of it...
you will not loose torque, but in general most engine mods will push your torque curve up higher, so you will have a little less torque down low. No matter what you do to the 300 it will be a torque monster.
if you could find a way to move the torque it makes up to about 5000rpm.... that would be very good. But i think the internals are a bit too big and clunky to be doing that.
The internals of the 300 will take 5000 rpm but the problem is the engine does not breath.
If the 300 had a cross flow head then it would rev .
You have to remember that this is a low(engine rpm) speed truck engine -but it will open up with some minor porting and a better intake and exhaust system

Port the head, especially pay attention to the bowl areas. Three angle valve job w/ back-cut intake valves. The head is the choke point on the 300, get it to flow better and everything else will follow.
