By the way, while it doesn't really matter I take a minor issue with your use of the term "restore". Typically that means "put back in original state", and that's not really what you are doing. I use the term "restify" for what I'm doing but, as I said, it doesn't really matter as long as we know what you mean.

Anyway, to help us help you we need to know what you are going to do with the truck. For instance, if you are going to tow anything very heavy we'll recommend you stay away from the M5OD transmission as it isn't an HD tranny. For towing or other HD use most would recommend the ZF5. Similarly, we need to know how serious you are about all-out power vs economy. If you are wanting power at any cost then I would recommend a Holley carb, like maybe the 1460 600 CFM unit. I had one on a 351M and with stock jetting the truck got 12.25 MPG and had gobs of power. I replaced it with a stock Edelbrock 1406 600 CFM carb and got a more crisp throttle response and 14.25 MPG. No, it doesn't have quite the top-end power of the Holley, but I rarely, if ever, need it and have gladly traded it for the better economy.
So, tell us more about your truck, your plans for the engine, transmission, and axles plus how you are going to use it and we can do a better job of recommending.
First off welcome to FTE the most informative Ford truck and more forum there is I have found at least. Also I am a fellow 4x4 converter. We got an 89 F350 2wd crew cab standard we are putting in parts out of an 84 F250 4x4 standard.
We have a F250 351 4x4 89 5 speed and they are great trucks.
How are you going to do the 4x4 conversion my advive for you is find a wrecked or non running that has all the drive train in good shape and use it for parts to convert it over. You start to do it from buying from stores they are expensive. And most of all good luck on finding that carb.
