303 is good. All synchro, makes it much easier to drive. Plenty strong as well. And they are common.
You may need bearings and synchros, but like you say, you have other things to do first. If you can run it at all, you'll know if it's howler/grinder before you do your engine swap.

If your going to use it like a truck like you say, you don't need a ton of HI-PO stuff. Your not going to crank it over 4500rpm, right? So headers and a 4 barrel intake. The right cam and your set. Unless you plan to pull a lot of weight, then get a 460! Mileage won't be much worse than a 351.
