460 swap
Don't put a 302 in there, you'll shoot yourself for it. 351 would be the better of the two, but why would you want to go down the latter? You'll have a lot less power.
Primary rig is Green Thunder:
95' F-150 XLT 4x4, 302, 5 spd, MSD 6A, Flowmaster Exhaust, Sunroof, Clear corners w/ Diamond headlights, CD player with 2 10" subs and some 32" BFG Muds

460 swap
A TON would have to be done. But it has been done before. I would stay away from the 302 in a F350. 351 would be the best bet. Search this site for a member by the name of "ddestruel". He has done some amazing stuff with a 460 swap!
