ECT, EOT, then it depends.
I check my FICM in the mornings, along with volts.
If I have the trailer, going camping, TFT and boost. (I have an 04, no boost on dash) And Fan speed.
Then both ICPs and IPR just to see how things are going from time to time.
There are many gauges, just don't drive yourself nuts. It's easy to do.

I've been told that you cannot have two dissimilar modules connected and querying the vehicle's system at the same time. Readings will be erratic.
I tried running both an Insight and a Scangauge at the same time with an ODBII splitter cable, and half the parameters on both the devices weren't reporting a reading. And some of the parameters that were providing a reading seemed off.
