About 2hrs give or take for the exhaust. Yes, basic tool set will work, probably need a couple long extensions and a universal joint for one of the bolts/nuts.
Also, spray all attachment points with PB Blaster a day before, your life will be much easier. Keep in mind the DPF/CAT system can way close to 100lbs, so have something supporting it other then your face when it comes loose.
What about the sensors. Can they just be unplugged
They can be just unplugged (tape the connectors to protect and fix them so they will not be damaged) if you have a tuner that allow not having those sensors.
If you have an air wrench or drill/driver, you can drop off the DPF-only in about 20min.
The nuts holding the DPF to the CAT are slightly undersized so they won't spin off by themselves and it gets tiring doing it with a socket wrench.
I had a jack under mine to hold it while pulling it off.
Don't bother with trying to pop off the rubber hangers. Completely remove the hanger piece from the frame by taking out 3 nuts. It's a lot easier.
I can vouch for that advice. Just did the delete it last week and man that exhaust sensor is a bear. I screwed it up but good with a wrench and then even some vice grips and didnt get it off. Ended up just leaving it in and storing the DPF/CAT assembly in the shed. Wished I'd read about the rubber hangers too. That took a while to get them off. I didn't realize you only need one of the hangers when you put in the new pipes.
Use the PB Blaster liberally on everything and let it soak in. When all the clamps are loose, use a rubber mallet to bang on the muffler to separate the pipes without damaging the muffler. Support the DPF with jack stands as it weighs a good amount.

That's funny, I seem to remember taking the time to warn you about the rubber hangers before you did your delete. I guess you skipped that part when reading. They are a real bitch if you try to fight them off without completely removing them, but I guess you know that now.
