Low ECT temp causing other problems?

I have a 03 Ford Excursion with 111,000km 6.0L and have been checking my ECT and EOT temps lately[using CTS monitor] Driving at 110 to 120km/ hr for roughly 5 to 8 mins my readings are 184 to 186 for ECT and 190 to 192 EOT. Temp outside is 5C, not towing. Do I need a thermostat? I'm having two issues I'm trying to wrap my head around

1- I pulled my EGR valve which was very dirty with dry soot but is a little gummed/sludged up above top o-ring and also inside the manifold is it mostly dry soot but there is some sludge if you use your finger to go into the turns of the manifold? EGR cooler/oil cooler replacement time or incomplete combustion because my temps are low?

2-The reason I pulled my EGR valve [thought egr cooler was gone or head gaskets etc..] I'am still having driplets of coolant from my cap area sometimes, [just replaced cap with new one a couple days ago]
ECT and EOT are still under 15degrees difference, no white smoke[tail pipe dry also], no loss of power and idles great.

Don't know where I should start or what to change first or if anything at all yet

Some kind of other checks or tests for the DIY to try first?

Which order of repairs would be recommended, IE-
Thermostat, egr delete/oil cooler repair, Flush gold coolant, etc..?

Suggestions?

Make sure your coolant level is 1/2 to 3/4" below the minimum line on the bottle. 5-8 minutes driving time isn't nearly enough for your temps to stabilize you need a good heat soak for comparing ECT/EOT. I would say, though, that your a candidate for a thermostat.

How fast and how long of a drive should I take to get ECT/EOT good and hot? If the ECT is low does that make sense about a little sludge in the manifold? Thanks

To really test the condition of that oil cooler you have to run for 15-20 minutes at a steady 65mph After the Coolant temp maxes out

And yes the EGR valve being a little Gooey is from the thermostat Burning to Cold

I wopuld throw a new thermostat in and then go for a good drive
So get the truck up to 190ECT then go a steady 65MPH for 15-20 minutes you will notice the Oil temp TOP Out and stabilize and that will give you an idea of that oil cooler condition.
