You can connect a gauge in each head via the ports in the heads. Just remove the plugs and use #5 ORB adapters to what ever your gauge is. These are the same plugs that get removed to install the HPx cross-over tubes.
Can also disconnect the HPOP hoses off the heads and use adapters (Eaton STC type) to connect a gauge directly to the pump. You can crank the engine and read pressure. You should make sure the gauge is capable of 5,000 PSI. The system can easily hit 3,000 psi.
