I have the door cracks like everyone else and out of warranty. I have also read about how the truck is prone to blowing engines (head gaskets, etc.).
My question is what can I do about these problems? Ford doesn't have these listed as recalls on its website but I have read that some people have had service done.

Also looking for suggestions on preventive maintenance that I have failed to do (ie, tune up, fluid changes, etc.). Like I said, I'm no wrencher.

If you don't have a leaking head gasket by now chances are pretty good that it wont leak. I wouldn't worry about it. If it does end up leaking sometime down the road all it leaks is some oil. They usually look worse than they actually are.
If you get along well with your selling dealer you could ask them about an After Warranty Adjustment on the doors. What happens with that, if it falls into Ford's guidelines, is that you would share the cost of the repair with the dealer and Ford.
As for maintenance have you replaced the spark plugs and fuel filter? If not, they are due.
Do you have an automatic transmission? Have you changed the oil and filter in it? Ever changed the rear end oil? Front end and transfer case too if it's a 4x4.
You say you did brake service....did you lube the caliper slides?
I'm sure others here will have more things for you to do and check
