false cylinder head over temp...

I have 2000 4x4 X has 85k on 6.8 v10. Sparaticly goes in to "safemode".pull over turn key off n turn rite back on evrythang ok...I've watchd has driving evrythang ok on dash then just instantlytemp jump ups n red lites on dash come on starts safe modethen just turn off n on all good..
I've flushd system new tstat 50/50 mix n no diffrent still happends any clues?

Just throwing this out there, but try changing the coolant temp sensor. It's right there on top by the tstat I believe.
