'05 6.0 did an egr delete about 3 months ago and just recently the engine fan has gone crazy, everything was just fine for 2 months, does anybody have an idea of how to solve this problem????
Explain what you mean by gone crazy. That doesn't tell us a whole lot.
When you did the egg delete did you leave the valve plugged in? If not might want to plug that back in because it will (on certain strategies) mess with the fan operation.

You need gauges - SGII or equivalent. It will let you know
if your coolant or oil temps are out of range and possibly
why your fan is going crazy.
Did you replace the oil cooler when you did the EGR cooler?
The oil cooler getting clogged is what leads to the EGR cooler
overheating and melting.
It seems back in '03/'04 mechanics didn't know the OIL cooler would
get the coolant passages clogged and this would reduce the coolant
flow to the EGR cooler and the EGR cooler failed and led to repeated
EGR cooler replacements before the OIL cooler was identified as the
cause of the original problem(s).
