Are you running the carbs synchronized, or are they progressive?
I ran mine synchronized, and had a problem with them running a little rich until I changed the power valves. I used a couple of 3.5s, with the original jets.
The reason I say "ran" is it's currently apart for a frame-off rebuild. I hope to have the engine mounted back on the frame in a week or two.
Mine too are synchronized together but I have not had it down the road. It has only been revving up in the garage, would the power valves be operating at this point? Seems to start and idle fine and does seem better now I have balanced them and adjusted the air screws, noticed today that one air screw is loose in the threads, could be worn threads in the body.

No, the power valves won't come into play in the garage. Not enough to give you any idea whether they are the right rating.
