I have recently put a ZF-5 speed tranny into my 87 and there are a few noises that I was wondering if anyone has had prior experience with. The first one is a whine that only happens when the truck is in neutral without depressing the clutch, which most people have told me it could be the pilot bearing. The second is a rattling noise that only happens when coasting with the tranny in neutral when I hit a bump in the road. I'm thinking it could be the syncronizer because if I slip it into gear I can feel it move, but I'm not sure.
My ZF does the rattle thing over bumps too. I'm not sure if it is normal or not, but like you I think it is the synchronizer rings.
I'm not sure what the whine is, but if the clutch is engaged (pedal up) the pilot bearing is stationary because there is not any relative movement between the input shaft and the crankshaft. The release bearing might be the noise, but I don't think it is the pilot bearing in the situation you describe.
