A Carbed 460 would probably be the best way to go if its going to be used mostly as a mudder/drag racer...etc...etc. Carbs are easier to work on, and can really push large amounts of fuel into the engine for more power and if you really want to go to the extream you can mount 2 or 3 4bbl carbs on your engine. But they generally have a few quirks and don't run as smoothly as a fuel injected engine.
A Fuel Injected 460 would be the way to go if you have mixed dutys planned for the vehicle. If you plan to use it as a daily driver and maybe just every now then take it out to play. Then a Fuel Injected system would probably work better. It'll be smoother, less prone to issues, and you'll get a little better fuel econmy out of it. With the right tuning a Fuel Injected 460 can make every bit the power a Carbed 460 can...And be more liveable on day to day basis as well...But it'll be more complex to work on, and shops will charge more to do tuning and extensive work on a Fuel Injected engine.
