coolant fan/engine surge

hey everyone, i am having some trouble with my brothers truck and am stumped. Its an 04 6.0 with just about 100,000 miles. Recently we had to replace the icp sensor because the truck was surging, this fixed the problem but now we are running into some new issues. The truck started surging again and the and coolant fan keeps coming on an off. Coolant temp, intake temp, and engine temp are all normal aswell as voltage. I did an egr delete back in early january and the truck has been fine until now. What could be going on now? Oil cooler?

What are your temps ect- eot. The factory gauges are junk don't tell much. And when egr delete was done was the oil cooler done? The reason the egr cooler has problems is oil coolers water flow gets restricted and then egr water flow gets restricted which then excesive heat smokes egr cooler. Can you read codes on it there does not have to be a light to have trouble codes.

No, the oil cooler was not done. I can read codes off my tuner (sct) but i am currently not running a tune, havent in a few weeks now and when i did it was very mild, a street or economy tune. I was getting all the temps from the tuner, which seem to be normal
