Best Engine + Trans Combo?

I'm on my second 5.8L F250. The 351 is a decent motor if you're not going to be hauling or towing really heavy loads. It will jump off the line empty and pull you up the hills pretty well.
The I6, based on my step-dad's old 92 F150, is a tractor engine, a little torque monster. Doesn't seem to notice moderate loads at all, but not going to jump off the line loaded or empty.
