I am looking at a bench seat from a '91 F150 single cab. In has the fold down arm rest and square seat back. I think this will bolt right into my '81 F150. Am I right or will I have to make some changes to make it fix? Also what kinds of seat belt issues will there be?
It will bolt right in. If you can grab the buckle end of the seat belts I would, as there were changes to the way they are supported, but it's a nice to have, not a need to have.
FWIW if you try and die your seatbelts do not remove them from the holders I did it last night and realized after I pulled the first one that I was an epic retard. So anyway, just leave them in there and go to town.

What do you mean by the holders? Are you talking about the plastic sleeves that go over them or removing the bolt that anchors them to the cab?
I was going to go to the junkyard tomorrow in hopes of finding the plastic covers. Ideally I'd pop mine off and slide them on and bolt mine back down but if you're saying removing the belt F's stuff up then I'm nervous.
