408 stroker kit

I've been researching stroker kits for my '78 windsor in my '73 F100 and I've found some heads I'd like to use and a couple affordable kits. Here are some links to some:

1) Does anyone have any expierience with these companies?
2) Are there any other (quality) kits out there that are cheaper that I'm not finding?
3) What size carb would you run with this setup?

These are the heads I like:
Racing Head Service: Pro Action™ Cast Iron Racing Cylinder Head; Assembled Flat Tappet

Eagle Specialty Products 103514000 - Eagle Cast Steel Crankshafts - Overview - SummitRacing.com

I have used Eagle before, and they work well. I just found the crank, but I know Summit has the kit too.

I would run a 750 pretty much for anything but the wildest of motors.
