I had an 88' F150 for a few years with the 300-6 in her and towed quite a bit with a 4K -ish trailer. However, I had the manual transmission which is total crap for towing rating, coming in at a measly 2500lbs. So I didn't even know for almost two years but I was way over that rating... The automagics are rated much better, in the 4000 range I think. (so yeah I changed the ATF and found little metal shavings so I bought me an F250, hehe)
As for the weight of the extended cab I have an extended cab 89 F250 and I think the curb weight is 400lbs more than the standard cab... but that includes frame and all so now that I've written this I've got no idea what just the cab would weigh, lol.

Grandpa wants some for his forge. My grandfather on my dad side lives in coal country, and dad used to haul coal, so getting some shouldnt be a problem for me....
