replace all values?

i want to have my 351m heads rebuilt by a machine shop. one of the valves is clearly burnt and must be replaced. should the shop replace all the valves, all the exhaust valves only or what.
should i leave the rocker arms on, so the shop can make somekind of evaluation?
should i ask the shop to install hardened valve sets?
thanks for your help?

You here some people say, all the exhaust valves should be replaced when doing a thorough valve job.

replace all values?

When I built my 400 I told the shop to spare no expense and they still said the intakes did not need replaced. The exhaust valve stems were all worn out. The intakes were fine.

I'd take the complete heads to a good machine shop and tell them not to cut any corners and go with what they say. They can inspect the rockers too.

i dropped the heads off at the shop today. the machinest told me he would have to change the one burned exhaust valve and might go ahead and change all the exhaust valves. he'll have to clean the heads and inspect them before he knows for sure. he said the rocker arms looded very good.
