If you were willing to pay someone else to do it, I'm sure you could find a custom gauge company. Actually, now that I think about it, I believe justdashes.com does custom gauge work. I couldn't tell you what their prices are, tho.
On a related note, a couple of years ago I was restoring a 75 Porsche 914, and one guy on the forum I posted on started customizing control *****. It was something like a smiley face was the headlight ****, a winking face was the volume control and a big cheesy grin face was the tuner. Guys on the boards loved 'em and he's filled a lot of orders for them.

Wouldn't the oil pressure needle go to full sweep if you replaced the resistor with a plain wire? It'd still "work" as poorly as always and you would be free to relabel it.
