Well sure has been awhile since I was in NC but do have some interesting memories. Been to a few great races there at CMS but that was before they went commercial. LOL Plan on going back again someday just waiting for a few officers to retire and get off the highways. New a couple of them southern belles too, hmmm wonder if they retired!
Eastern NC BBQ is the best. (with vinegar-base sauce instead of mustard-base)......Annual Newport pig-pickin is the s--t.....
I'm trying to remember, Is the KC BBQ pork, or beef? I'm thinking beef, seeing as Kansas was the center of the cattle drives back in the day.....

Kansas style BBQ is mostly beef, but our pork is MUCH better.
I got 40lbs of brisket in the smoker right now, Itll be ready tomorrow. drop on by for a taste. I also make my own rubs and sauces along with some killer pulled pork.
