Engine overheat

Going down the highway and out of no where my engine climbs up to make heat. Pull over and open her up and im out of coolant, i recently had full thing of coolant in there 3 weeks ago but it was probably at least 3 years old. So im questioning if coolant just went bad and it needs to be flushed or what yall think. Also what coolant you recommend.

Was it leaking? If not, check your engine and tranny oil.

Add more and watch the radiator area when it warms up; I've had where it leaks around the upper seam of the radiator, and then dries due to the fan, so it was really hard to tell.

When you refilled the coolant 3 weeks ago, did you let the engine warm up? If I don't let it warm up, the t-stat will keep the coolant level high in the radiator. Then when the engine warms, the t-stat opens, and the high level of coolant in the radiator will fill the engine, leaving the radiator half full. At least 1.5-2 more gallons will be needed to top it off. So maybe you just need to top it off.
