If your going to go thru the trouble of putting a 351 in, mind as well go with a 460. Theres no shortage of power there

Except that's far more trouble than putting a 351w in.

A 302 that doesn't scream when towing? Never heard of it! Lol

I have mine bored 0.040 over, with Comp cam 31-255-5 and its loves 2800-3000 rpm daily!!

Agreed with a 351w swap and regear to minimum of 4.10 gears if you plan on towing much.

Tony you're only just getting into the powerband at 2500rom. A stock 5.0 truck motor is all done at 4500rpm(3500rpm for a pre '94 motor), but it doesn't even begin to make usable power until it hits 2000rpm so you're more than safe. If your motor is really noisy at that RPM then maybe your fan clutch is seized.
