I would WAG a guess of 55 to 60 at idle. LOTS of variables but sitting at idle makes it tough on the AC to cool well. Also, the temp will get cooler once the whole volume of air in the van is cooled. MAX AC setting recirculates the air in the vehicle which prevents outside hotter air from entering. Also, parked in the sun vs parked in the shade is a factor.
The best way to measure AC performance is with a pressure gauge set.

One thing I could be having a issue with is, either the blinder isn't recycling the cold air or I have outside air coming in somehow even though my max air is on.

Just to repeat Jim's comments sitting still at an idle greatly reduces leaving air temps at the dash vents---50-60 degrees seems like an accurate guess. I know at freeway speed, A/C in Normal mode temp control full cool I see LAT's of 38*---idling around town or parked they quickly rise closer to 50*. This is just a normal function of automotive systems, especially those charged with R134a.
Chances are your system is just fine but to rest assured have it checked by someone knowledgeable, that person who owns and can interpret what a set of gauges indicates.
