4.6 engine in 1998 f-150. gauage problem

4.6 engine in 1998 f-150. gauage problem
I disconnected my temp gauage and installed a new manual one. so if the wires are off how come it still spikes only after driving it on the highway.
is they any way to totally make the gauge not move at all. my truck runs super cool at 175 to 195 all the time. has 149000 miles I change the oil every 3000 miles. I see other 4.6 engins have the same problem..i have replaced every thing under the hood.
rad. tsta,hoses. flushed eng twice. replace all the temp sensors.
had a radiator shop guy look at my truck and said the truck is not over heating, I have a short in the wiring harness.i cleaned all and every ground on the truck. I am at a lose why it spikes ..can someone tell me what ford did? thanks.
