Question on Bedding-In Brake Pads (Now or Later?)

Ok, I bought a set of EBC GreenStuff 7000 Series pads for my truck a little while back.

I'm sure many of you already know about these pads, and how they have the red abrasive coating on the surface. According to the leaflet that comes with the pads: I'm supposed to go very easy on the brakes for the next 200 miles of "urban" use so that the coating can abrade/condition the rotors. I'm right at 1000 miles since installation, and I think I can feel that the coating is finally coming off of the pads (I drive in mostly rural areas with few stop lights/signs).

I am now supposed to take the truck out and decelerating from 60 to 20 mph "at least 5 times" to finish the Bed-In process.

I'm winterizing the truck today (fill up with ethanol free gas, change oil, clean, etc.) and wont be driving it again until the road salt is gone.

Do you think that I should do the Bed-In process now, or should I wait until spring? To me, it makes sense to do it in spring, because any surface rust that develops on the rotors will then be taken off during the bed-in process. Or, would it be better to just do the bed-in now and get it over with?

I know this whole thing probably sounds really ****, but I tend to overthink everything when it comes to my truck.

I'd do it now, in case you forget in the spring.

I'd vote for do it now too. One way or the other you're going to have to deal with the surface rust, you might as well just cross one thing off the list now while you can.
