Depending on where you have the waterjetting or lazer cutting done the artwork does not necessarily need to be any special script. The local guy takes a jpeg picture, loads it into his software, and then traces it to make the proper vector file to drive the waterjet machine. One word of caution...don't make the lines too small as in that Edwardian font example, the resulting letters will be very flimsy and hard to work with. Other options for the lettering material are nylon, acrylic, wood, plastic, ...just about any material will work. If you might like a thicker letter then you might want to go with a plastic material and save the weight.

I did a Google search on Ford script and came up with this.
Ford Script at Fontage - Sorting the entire universe's true type fonts
It looks to be a free download.
Using that, you can get it plotted out at any size you want at your local Kinko's store.
