What is the thread and pitch of the fan to water pump bolts. On 76 390

I want to say 5/16"-18 but I cannot be certain.

My best guess is that it's the same as the Ford 400, even though it's a different motor.

Mine was 7/16 - 20 (fine thread, not coarse thread)

Usually,
7/16 socket = 1/4-20 or 1/4-20 thread
1/2 socket = 5/16-18 or 5/16-24 thread
9/16 socket = 3/8-16 or 3/8-24 thread
The thread is threads/inch. Less threads equal coarse. More threads equal fine.

No, going to take the pump in with me and size them up. I will probably call ARP and see if they have stud and 12pts. That will match up.
