Just a wierd thought.... I drove the truck like I stole it....tried to get it as hot as I could, romped it quite a few times....
With the new IAC valve it runs way better, revs better, chirps tires better
And no oil pressure issue (yet)
Could have the iac been letteing to much air as in pressure , messing up any balance in regards to case pressure? Its just to wierd to not have a normal oil issue disappear with something so seemingly unrelated changed??????
Try another mechanical guage.
I've seen them go bad ,could be a clogged hose or tubing to it also.
Maybe some teflon sealant floating around from when you or whom ever installed it.

I have the gage tee'd at the port, the factory idiot sensor is still intact and reads zero when the mech gage does...so I know its not a indication issue.
Then you have answered your question ,get ready to pull the pan and put a new pump and screen in it.
Otherwise you'll be putting a new engine/engine in it.
One other thought is that the drain back holes in the heads are clogged not alowing the oiloil back to the pan fast enough to supply the pump(wierd theory )chk the pvc hose to see if its full of oiloil.
we had a brand new v-10 in the shop back a few yrs that the holes never got drilled in the head from the factory.Should have seen the look on the eng rep when he saw the head.They new exactly who made the head also at the engine engine plant

you need to desludge that motor and replace the pick up tube as rich said. drop the pan clean it out new tube. while the pan is off clean all the sludge from up in the block crank area. pull both vc's coat hanger out the drain backs. spray clean the top end
to clean it all out your going to need something like carb cleaner to melt the suldge off that you can spray up and down.
last motor i had to do with the same problem you have took a full case of carb spray. after the oil pressure was perfect.
If both gages are reading zero and there is NO engine clatter and noise then it is time to suspect the gage system... just becaus both gages agree does not mean that much the way he used a "T" to drive both gages...
Hey perhaps some of that slick neato white teflon tape is clogging the inlet of the "T"....just a thought
