In all honesty, doing this work, and investing that kind of time, not to mention that your truck would be off the road, really wouldn't be worth it, especially with how small of a gain you would see. Figure $200 for an Offey intake from JCWhitney, another $200 for a Holley 350cfm 2BBL from Summit, maybe $50 at the local junkyard for stock EFI exhaust manifolds and downpipe, and another $50 for gaskets and carb adaptor. $500, and you have ten times the performance that you could with stock intake and exhaust. I've been wanting to swap to some EFI exhaust manifolds, and a 2bbl carb for the longest, i could just never remember who made the 2 or 4bbl manifolds for a six.
