I have just now completed the teardown and removal of the cab from my 41 COE. I have a large variety of JPEG photos taken during the process, and could share them if that would help. The cab is unique in many ways, in particular, how it mounts to the frame. Anyway, let me know if the photos can help, and if any discussion of the process could assist you.
I would check with Vintage Auto Parts in Woodinville WA or their web pabe at www.vapinc.com they should be able to help you. If not there check with BobDrake in Grants Pass Or. Besides his parts biz he also drives a COE.

Robert - wouldn't mind seeing you set up your user gallery and posting various stages of your truck from start to finish. Sounds like you have half the battle of creating your gallery won just by already having them in JPEG format.
Robert - thanks for setting up your gallery. Cool truck! I saw one of those trucks at last years Turkey Rod Run (Daytona's annual classic and rod show). I'll try to remember to look through the books I have at home this weekend to see if I have any photo's of the grille insert you're looking for.
