Funny, I just converted the other way. It should be easy. You will need a intake and a older style distributor & ignition module and of course a carb. The biggest problem will be getting it to pass emissions if you live in on of those testing states.

You would also have to find low pressure pumps to fit your tanks since you have high pressure pumps in your tanks that would blow right past a carbs needle and seat.
The EFI will give better mileage and drivability than a carb. I personally wouldn't change iot myself.
