The H.O. is simply a higher performance version, H.O. meaning High Output. It featured a more aggressive cam and a few other tweaks to kick the power up.
If that 302 in your '81 is the original engine, it's not an H.O. They didn't start building the H.O. till 'about '85 and it didn't come in trucks.
