What have I gotten myself into?!

this started because the engine was covered in years of oil leaks and dirt. Now it has grown into painting the frame and rebuilding the whole truck.
Question: Powder coat, POR 15, Rustoleum? What do you all think?

I have seen small projects snowball into full restorations before.

I do like POR15, but have done Rustoleum too. I really depends on what you you want. Is it going to be a driver, I would go with the POR15 as it's a real tough coating, but it does take good prep. Biggest thing is decreasing and removing the loose rust. When I did my frame the garage was coated in layers of rust dust!

I'm the wrong one to be asking what you got into, look at my build.

Depends on how far your going to strip the frame to paint. If you remove the the brake lines and wiring, have it media blasted. Epoxy primer, then your top coat if you want. Or the quick way is to clean everything and use a rust converter, then top coat.

That's an impressive tear down! It doesn't look like you'll need any other hobbies for a while.

I brushed satin rustoleum with 10% hardener on a pressure washed, scrubbed and degreased frame. I've been climbing on and working around it, replacing the steering box, master cylinder, running new brake line, etc and it's holding up just fine. This is for a driver quality resto on a 68 F250, CS. I didn't take mine down as far as yours, but I did do a color change. It's a ton of work. Keep at it, you'll get there.

Mine is done in POR-15. Wire brushed as much as I could and ground down what needed to be ground down. Fixed radiator mount holes and then washed it with POR-15 wash, treated with POR-15 etching wash and then coated with POR-15 paint. Just brushed it on. I love how it flattens itself out to a nice smooth, shiny finish.

Just do a small amount at a time. Don't look at it like you've got an entire truck to finish, just get a little done at a time and before you know it, it'll be finished.
