I have been driving my 75 f600 ramp truck for about a year now, been on alot of trips with it, hauled alot of 70's ford trucks on her, and never had any problems, probably one of the most reliable trucks i've ever had.
Last night I was returning from a 110 mile round trip. The trucks usually maxes out out 53-55mph. it has a 359-4v, 5 speed trans, and 6.33 eaton 2 speed rear axle. While coming down I-95 she really started picking up speed, even turned my gps on to confirm, on the flat I started running about 60-65, of course on the hills it dropped down, but she has never run that fast before. Do the governers in these trucks ever just fail? and what is the governed rpm? Will I hurt anything by running it like this, I know I need to watch my rpm's and not blow her up, but just worried about something else giving up in the distributor.
Also a question on the 2 speed, I'd like to swap to something higher, and would like to do a diesel swap in the future, I know parts are getting very hard to find for these old axles, does anyone know of a rebuilder that can swap in higher gears?

I went through this a few years ago with my '58 F600 and Eaton 2 speed axle.
By "higher gears" I assume you mean something like 4.10 gears to get better speed since you're not hauling heavy loads. The highest gear offered for that rear axle was a 5.83 which isn't much higher than the 6.33 you have. What I did was follow Rustyrelic's lead and find a Dana 80 rear axle out of a Freightliner MT delivery van as used by Fedex and UPS. It is the proper width for an F600, has the 6 on 8.75" lug bolt pattern and gear ratios from 3.00 to 5.00 (or thereabouts) are available for it. Rustyrelic got a 3.31, mine has a 3.73.
I never ran my F600 with the original 292 and the Dana axle. I am swapping out the entire original drivetrain and replacing it a 7.3L IDI diesel, a ZF 5 speed, a Spicer 3 speed auxiliary trans (Brownie) and the Dana 80.
I thought about, actually read the post on it, what are they rated for? I carry a pretty heavy load sometimes on it, hauled a b500 bus a couple weeks ago. I also like having the 2 speed, with a full load it makes a big difference. I'd like to get a ratio in the low 5's or high 4's. I feel like I don't even use the bottom of the tranney, I take off in 3rd high empty, sometimes with 4or 5k on it, empty on the flat I go from 3h to 5h, with a taller gear I could actually use the whole trans, and still get some speed on the highway
The truck is rated at 17k, weighs around 8k, I haul my skid loader a lot with it, and some other heavy trucks so I can't afford to loose any rating, I've gone a little over the rating and been ok, but not much, don't want to push it. it's got the same drivetrain as another truck I have that's rated for 22 but it has a double frame. I saw in the ford shop manual there was a 5.29 or something close to that for this axle, and a 5.83, but around me there are not many left to find for parts. I'm also open to swapping rears, wouldn't mind switching to air brakes anyway. Found a 4.56 Rockwell 2 speed air in texas, but it would cost 1400 by the time I got it and had it shipped. I don't mind changing the whole axle if I can find something that will work.
I'd also like to put air ride on the rear one of these days, even thought about just putting the truck on a more modern frame but that's going a little far with it, just works to good as it is. An overdrive would be a good option but they are almost impossible to find.
mis read what you said, not for sure what my axle rating is, I'd have to check it tonight but the truck is 17k overall, I really like having the 2 speed, my 75 f500 330 4 speed 6.20 rear is terrible with the single speed rear, I'm spoiled with the 2 speed

I have a 1988 GMC (former UHAUL) C6000. 6L gas , truck 5 speed, 5.33 rear gears that ran about 55 on the freeway. I switched the 5 speed out to a 700R4 (rebuilt heavy duty). Now I can run 70 on the flats. Not enough power in that 6.0L.

A 700R4 is a car and light truck transmission, if I'm not mistaken. I read the part where you state it is rebuilt heavy duty, but is it heavy duty enough for the size of truck you're running it in? If I'm not mistaken, the transmission that would have been used behind that 366 tall deck with adapter plate, would be either the OEM Clark 5 speed or Allison AT-540? I take it, you had to remove the adapter plate, use a different starter and flexplate to get that 700R4 to bolt up to that 366? How about the OEM transmission mounted parking brake? You likely needed some kind of adapter to get that bolted up too?
