My wheels finally showed up yesterday, so I went to Discount Tire after work to get everything mounted and installed. I ended up going with the 18x9 +18mm Method NV wheels and 325/65 R18 BFGoodrich All-Terrain T/A KO2 tires. Much to my surprise, there is zero clearance or rubbing issues with this setup and the spare wheel and tire I bought actually fit under the bed in the stock location as though it was designed for it.
I can't believe how much a simple set of wheels and tires can change the look of a truck, but it now looks much more aggressive and I really like the stance. I was worried the more aggressive offset of the wheels would push the wider tires too far outside of the fenders and require flares, but they sit almost flush and it looks like my mudflaps will even still be functional. I'm pretty sure I'm going to pull the rear center caps and just run without them since I can't run the fronts with the hubs anyway.
Below are a few pics I took right after the install. Please excuse the dirty truck.
